Jason England - Chef/Co-owner
Jason began his career in 2008 in the depths of the dish pit and he immediately identified with the chaotic culture that was ‘the kitchen’. Years of persistence and perseverance paid off and Jason become a qualified chef, training at COAST restaurant under the guidance of Head Chef, Nick Street-Brown. Jason sought to further his experience overseas and eventually landed a position working for Rick Stein at ‘The Seafood Restaurant’ in Cornwall, United Kingdom. During this time Jason identified his passion for working with fresh, sustainable and locally sourced seafood. He continues to showcase his passion daily with detail, precision and creativity invested in every dish. Jason’s dedication to sharing his skill, knowledge and experience has firmly cemented his position as a leader within the Fraser Coast dining scene.
Scott Thompson - Manager/Co-owner
Growing up in New Zealand played a major part in the food journey Scott has taken . The memory of collecting seafood as a child sparked a keen interest in dining for enjoyment. After developing a career in the bars and restaurants of Brisbane, Scott decided to return to his Australian home town of Hervey Bay. He continued developing his career alongside the team at COAST restaurant and became a qualified chef alongside Jason. After some world travel and a year working in the Canadian Rockies, Scott decided to return home to start focusing on this next step in his career.
